Note: Traditional Food Products are an important part of South European culture, identity, and heritage, in general, regulated by a specific national and not specifically Community legislation. They could help rural areas and farms to develop themselves and to get better their economic and social conditions. Traditional Products are, often, sold in farmers’ markets and consumers quite appreciate this kind of food products because, in this way, they can discover traditional tastes and old recipes and perceive a different kind of quality from industrial food products. Traditional Products have recorded exponential growth in last time; these include: soft drinks, spirits, liqueurs; fresh meat and preparations; cheeses; fats (butter, margarine, oils); fresh pasta and bakery products; fish preparations; products of animal origin; plant products. Within this overview, the Cured Meats constitute for the ingredients and production techniques, or for their know-how, imbued with local knowledge, and therefore not exportable to geographically different places for traditions and culture, a baggage of material and intangible elements unrepeatable. The Southern delicatessen is rich in Traditional Products. With this study, the characteristics of some of the most common seasoned meat products (Soppressata, Salsiccia and ’Nduja) of Calabria Region have been analyzed. |
